BBQ Pulled Pork

An easy dish which you just have to throw all in the slow cooker with few ingredients

This recipe is super easy, and you do not even have to cook anything to serve it up with! The smoky, BBQ flavours cooks away over 8 hours making the pork tender and delicious.


I added the sweetcorn to get an extra veggie in but this is totally optional and the BBQ seasoning I used was a Texas steakhouse rub. I served mine up with wraps and a home made coleslaw (just shred some cabbage, grate some carrot and mix up with mayo, dash of cider vinegar and mustard) but could also be enjoyed on a jacket potato or in a burger bun.


Ingredients

  • 350g pork fillet

  • approx 4 tbsp of BBQ seasoning/rub

  • 100ml BBQ sauce

  • 1 Tbsp Cider vinegar

  • sweetcorn (optional)

Directions

  1. Generously coat and rub the BBQ seasoning into the pork fillet and add to slow cooker

  2. Add the BBQ sauce and sweetcorn, and coat over pork fillet

  3. Cook for 8 hours on low or 4 hours on high

  4. Tear apart the pork with two forks and mix in the cider vinegar
