Summer Chicken and Green Veg Stew

A delicious light stew perfect for summer filled with vegetables and protein.


I served mine up with courgetti (spiralized courgette), fried off with some garlic, but could have it with potato or make it into a pasta dish with some spaghetti.


Ingredients

Serves 2

  • 1 white onion, finely sliced

  • 2 celery sticks

  • 4 garlic cloves, crushed

  • 2 leeks, cut into rounds and halved

  • 2 chicken breast, chopped into chunks

  • zest and juice of 1 lemon

  • 50ml chicken stock

  • 3 tbsp Creme fraiche


Directions

  1. Put the onion, celery, garlic, leeks, chicken, lemon zest and juice, and chicken stock and cook on high for 2 hours or low for 4 hours

  2. Stir through the Creme fraiche for the last 5 minutes so it warms through
