Meat meets vegetable in this basic but effective stew! I enjoyed mine with petit poi’s and scatter of spring onions but could also be enjoyed with rice or potatoes for that carb fix.
Ingredients
Serves 2
400g stewing beef, chopped into chunks
1 white onion, diced
4tbsp soy sauce
2 tbsp hoisin sauce
1 tbsp ginger paste
2 tbsp chilli sauce
4 garlic cloves, crushed
2 tsp rice wine vinegar
1 tbsp cornflour
1-2 heads of broccoli, chopped
Directions
Heat a little oil in a pan, fry off the beef until browned and set aside
Fry off onions until start to soften, the add the garlic and ginger paste for 1 minute
Add all the ingredients to the slow cooker, season and mix. If you want the broccoli to remain some crunch, hold off adding the broccoli until 2 hours before serving if on low, 1 hours if on high
Cook on 8 hours on low or 4 hours on high
