Beef and Broccoli Stew

Meat meets vegetable in this basic but effective stew! I enjoyed mine with petit poi’s and scatter of spring onions but could also be enjoyed with rice or potatoes for that carb fix.


Ingredients

Serves 2

  • 400g stewing beef, chopped into chunks

  • 1 white onion, diced

  • 4tbsp soy sauce

  • 2 tbsp hoisin sauce

  • 1 tbsp ginger paste

  • 2 tbsp chilli sauce

  • 4 garlic cloves, crushed

  • 2 tsp rice wine vinegar

  • 1 tbsp cornflour

  • 1-2 heads of broccoli, chopped


Directions

  1. Heat a little oil in a pan, fry off the beef until browned and set aside

  2. Fry off onions until start to soften, the add the garlic and ginger paste for 1 minute

  3. Add all the ingredients to the slow cooker, season and mix. If you want the broccoli to remain some crunch, hold off adding the broccoli until 2 hours before serving if on low, 1 hours if on high

  4. Cook on 8 hours on low or 4 hours on high
