Beef Goulash

Inspired by a recent trip to Prague, a traditional eastern European dish

I tried goulash for the first time on holiday in Prague and thought it would be perfect for the slow cooker so just had to try it.
The beef stews away in the slow cooker in the stock and tomato sauce, adding a hint of sweetness. The sour cream then gives it a creamy finish. Also, adding in the peppers gets in those veggies.
I served mine with potatoes but in Prague they served it up in bread bowls! Could also be enjoyed with rice or just some crusty bread on the side. It is also easy to freeze for leftovers another time.
Beef Goulash
Serves 4
Ingredients

800-1kg stewing or braising steak
1 white onion, diced
2 tomatoes, diced
3 garlic gloves, crushed
2 tbsp tomato paste
200ml beef stock
150ml soured cream
3 peppers, cut into stripes
1 tbsp smoked paprika
2 tbsp flour
2 tsp caraway seeds
Small bunch of parsley (optional)
Directions
Heat a frying pan with a little oil, toss the beef in the flour and fry off the beef until browned and add to slow cooker
Add to the slow cooker the onion, garlic, pepper, tomatoes, stock, tomato paste, caraway seeds, smoked paprika and season well and mix together
Cook on low for 8 hours
Stir through the sour cream and serve, scatter over the parsley
