Carnitas (Spicy slow-cooked pork)

Really easy Mexican recipe for the slow cooker

The recipe produces delicious shredded pork with a bit of a kick from the spices with very little steps


I served mine on a tortilla wrap, chilli sauce (for an extra kick!) homemade salsa and guacamole.


Ingredients

Serves 4

  • 800g pork fillet

  • 2 oranges, juiced

  • 2 limes, juiced

  • 2-4 chillies, diced (depending on spice level)

  • 1 onion, diced

  • 4 garlic coves

  • 2 tbsp dried oregano

  • 2 tsp cumin

  • 2 tsp cayenne pepper (this will bring some spice!)

Directions

  1. Mix the oregano, cumin, cayenne pepper and garlic together, smother over the pork

  2. Add the pork and rest of the ingredients to the slow cooker

  3. Cook for 8-10 hours on low or 4-5 on high

  4. Shred the pork (I use two forks) and serve
