Chicken, Chorizo and Tomato Pasta

Pasta dish all in one pot to save on that washing up.

Lovely creamy dish brining the sweetness of the tomato and spices of the chorizo together. Very easy one pot recipe which does not take as long (cooks on high) but does require some attendance 45 mins before the end.


Ingredients

Serves 4

  • 4 chicken breasts, chopped into chunks

  • 225g chorizo, cut into rings

  • 250g baby spinach

  • 6-8 sundried tomatoes roughly chopped

  • 3 tbsp red pesto

  • 5 garlic cloves crushed

  • 2 tbsp basil, roughly chopped

  • 300g pasta (any shape)

  • 520ml chicken stock

  • 200g cream cheese

  • Parmesan (optional)


Directions

  1. Add the chicken breasts, chorizo, sundried tomatoes, red pesto, garlic, basil and 100ml chicken stock to the slow cooker and mix well. Cook on high for 2.5 hours.

  2. Add the pasta and rest of the chicken stock and cook on high for 45 minutes

  3. Add the spinach and cream cheese and mix, the spinach should wilt a bit.

  4. Serve with some grated parmesan on top
