Chicken, Honey and Garlic Noodles

A one pot sweet and savoury noodle dish

A real crowd pleaser with very little effort necessary, all in the one pot. I added sugar snaps and carrot shavings to get in my veggies (as this is what I had in the fridge!) so these could be swapped out. Try adding mushrooms along with the chicken or spinach at the end.

Ingredients

Serves 2

  • 350g chicken breasts

  • 5 tbsp soy sauce

  • 3 tbsp honey

  • 1 tbsp corn flour

  • 5 garlic cloves, crushed

  • 4 tbsp siracha

  • 300g 'straight to wok' noodles

  • 2 tbsp hoisin

  • 1 tbsp crushed ginger

  • Sugar snaps

  • Carrot shavings (using a peeler)

  • Spring onion (optional garnish)

Direction

  1. Add all the ingredients to slow cooker other than the noodles, carrots, sugar snaps and spring onions, mix well

  2. Cook for 3 hours on high or 6 hours on low

  3. Add the noodles, sugar snaps and carrot shavings. Stir, warming through for about 10 mins. Serve and garnish with the spring onions
