Chicken Parmesan Orzo One Pot

Creamy, cheesy and comforting orzo dish, all done in the slow cooker

Save on washing up with this easy one pot. You just need to put in all the ingredients (minimal prep), cook for 6 hours, add the orzo and cook for another 30 minutes and you've got your dinner! Perfect for a busy day.


I added in spinach to get a vegetable in but you could also do peas or leaks.


Ingredients

Serves 4

  • 600g chicken breasts

  • 240g orzo

  • 550ml chicken stock

  • 5 cloves of garlic, crushed

  • 1 large white onion, diced

  • 50g parmesan, finely grated

  • 250g Spinach

  • 2 tbsp paprika

  • 2 tbsp Oregano

  • 80ml single cream or crème fraiche


Directions

  1. Add your chicken, onion, garlic, paprika, oregano and 150 ml of your chicken stock to the slow cooker and cook on low for 6 hours or 3 hours on high

  2. Stir the mix so the chicken falls apart. Add the Orzo and rest of the stock and cook on HIGH for 30 minutes

  3. Add the single cream and spinach to warm through (you may need to add the spinach in batches)
