Lentil and Spinach Curry

A delicious and aromatic vegan slow cooker dish.
I love to cook lentils in the slow cooker as it makes it very easy to get right. It also allows the spices to stew into the curry sauce. I served mine up with flatbread, yogurt and tamarind sauce, but could also be enjoyed with rice.
Ingredients
Serves 4
1 white onion, diced
1 red onion, diced
2 tbsp tomato paste
1 tbsp ginger paste
6 cloves garlic, crushed
2 tbsp madras curry powder
1 tbsp ground paprika
1/2 tbsp ground turmeric
1/2 tbsp ground cumin
2 cups green lentils
5 cups veg stock
2 handfuls of spinach
Directions
Heat a little oil in a pan. Fry off the onions with the ginger and ground spices for 5-10 mins
Add the garlic and tomato paste and cook for 2 mins
Add to the slow cooker with the lentils and stock
Cook for 4 hours on high and 4 hours on low
Add the spinach and mix, let it wilt (takes about 10 mins)
