Spicy Bean and Chorizo Stew

A spicy twist on a classic stew!


Ingredients

Serves 4

  • 2 can butter beans

  • 250g spicy chorizo ring, chopped into rounds

  • 2 peppers, sliced

  • 1 white and 1 red onion, diced

  • 2-4 chillies, diced

  • 1 can chopped tomatoes

  • 2 tbsp dried mixed herbs

  • 3 cloves garlic, crushed

  • 1 tbsp paprika


Directions

  1. Heat a little oil in a pan, fry off the chorizo for a few mins then add the onions until soft

  2. Add all the ingredients to the slow cooker and mix

  3. Cook for 6 hours on low or 3 hours on high
